Frequently asked questions

How long does the bowl need freezing?

A whole night and at the back of the freezer. If you hear liquid inside when you move it, it is not ready: churning like that is the commonest cause of ice cream that never sets.

Can you make two batches back to back?

Not with a single bowl: it comes out lukewarm and has to be refrozen. Anyone who makes ice cream often ends up with two bowls or moves to a compressor.

Does the mix have to go in cold?

The colder the better. The bowl only carries so much cold, and everything the fridge has not already chilled comes out of its budget, so it barely makes it to the end.

Does it make worse ice cream than a compressor?

Not as a rule. With the bowl properly frozen and the mix cold the result is perfectly decent; what you lose is convenience and being able to run batches back to back.
