Frequently asked questions

Where do I start if I have never formulated?

With a book that explains how a mix is balanced before giving you a single recipe. Recipe books pay off later, once you can read a formula and understand why it holds what it holds.

Do I need chemistry to understand them?

No. What you need to understand is what each family of ingredients does: the sugars, the fat, the non-fat solids and the water. With that you can read any formula, and that is exactly what these books teach.

Is a professional book any use for making ice cream at home?

Yes, because balancing a mix does not depend on the size of the workshop. What changes is the machine: at home you scale down and churning takes longer, but the criteria are the same.

Which books do we follow when we balance?

The criteria behind our reviews and the calculator come mainly from Juan Mora Pastor and Angelo Corvitto. When two sources disagree, they decide, in that order.

Is the price higher if I buy through your link?
