What sets a great gelateria apart
Beyond the flavour list, a good ice cream shop shows in the details: display cabinets at the right temperature, ice cream without garish colourings, creamy textures without excess air and a high turnover that guarantees freshness. Making it in house and working with seasonal fruit are usually the best sign of quality.
Italy, birthplace of gelato
Italy put artisan ice cream on the map and its tradition is undeniable: less fat and less air than industrial, and centuries of craft.
