Why we recommend
Yon Gallardo
Only ice cream shops worth getting to know make it onto our map. These are some of the reasons we recommend Yon Gallardo:
Family tradition
Third generation of a family of ice cream makers of Italian origin.
Quality ingredients
They choose the fruit themselves and roast the nuts in their own workshop.
Technique and evolution
They combine Italian tradition with their own technique and innovation.
An identity of their own
A recognisable style, built around the product.
Everything is made in Irun, and from there they supply their shops in Irun, Errenteria and Hondarribia.
What to try at
Yon Gallardo
A display case that changes with the seasons, with classics and creations of their own. These are some of the must-tries:
Pistachio
Italian style, with the nut as the star.
Bourbon vanilla
From Madagascar, from the pod: the benchmark.
Chocolate and orange
Dark chocolate with a citrus touch.
Mango
As a sorbet: fruit and little else, dairy-free.
Yon Gallardo,
third generation
His way of working blends Italian tradition with a technical eye: the balance of the recipe matters to him as much as the ingredients, and he cuts the sugar without giving up texture.
And he doesn’t keep what he knows to himself: he trains and advises other professionals, and has worked with the Basque Culinary Center, Aiala (Karlos Arguiñano’s school) and the EPGB.
“Taking what I know to the grave doesn’t seem practical to me. People need to share and learn from collective knowledge.”

Frequently asked questions
Where are the Yon Gallardo ice cream shops?
Tiene tres establecimientos en Gipuzkoa: Hondarribia (San Pedro Kalea, 59), Irun (Paseo Colón, 27) y Errenteria (Santxoenea Kalea, 22). Los tres se abastecen del mismo obrador.
How long has Yon Gallardo been around?
What is their best-selling ice cream?
Who is Yon Gallardo?
Does he teach ice cream making?
What techniques does he use in his workshop?
