What precision do I actually need?

For ice cream, 1 gram is not enough: stabiliser is dosed in tenths.

Why do we insist on the tare?

Because formulating means adding up in the same bowl.

Will the one I have at home do?

Put 100 g on, take it off and put it back. If it does not give the same number twice, it is no good.

Is it normal for them to switch off by themselves?

Many switch off after two minutes and leave you halfway. Check before you buy.
