Frequently asked questions
Which recipes are on this list?
The 27 sorbets on the site: the ones without a single dairy ingredient in the formula. No milk, no cream, no milk powder, no butter. Their base is water and fruit, and the body comes from the sugars and the dry extract of the fruit itself, not from milk fat.
Is lactose-free the same as vegan?
Almost, but not quite. Everything vegan is lactose-free, because it contains nothing of animal origin. The other way round does not always hold: a recipe can contain honey or egg and still have no lactose. Of these 27, 24 are also marked as vegan; you can cross that with the Vegan filter up here.
Why are the cream sorbets not here?
Because they contain skimmed milk powder, and the strawberry one whole milk as well. It is a decision in the formula, not an oversight: the cream sorbet is after a creamy point halfway between the two, and that point comes from the dairy. That is why all three stay off this list.
Can you make a creamy ice cream without lactose?
Yes, but not by swapping the milk for water. What milk brings is fat, protein and solids, and if you take them out without putting them back the result is ice. With coconut, almond or oat drink you get there, but the balance has to be rebuilt: dry extract up and sugars adjusted. The calculator does it with any base.
Are lactose-free and milk-free the same thing?
No. There is lactose-free milk, which is real milk with lactase added to split the sugar. It works for anyone who does not tolerate lactose, but it is no good for a vegan or for someone allergic to milk protein, because the proteins are still there. These 27 recipes contain no milk of any kind.
What about traces?
Some recipes use a branded ingredient —a couverture, a nut paste— whose label may warn of traces of milk. By formula they contain no dairy; what you buy is up to you. If it matters in your case, check the label of that particular ingredient.
