Homemade yoghurt is a very good ice cream base and lets you control acidity and solids, which is exactly what a shop-bought one will not let you do.

What temperature does it need to hold?

Around 42–44 °C for eight to ten hours. What matters is not the peak, it is that it does not move.

Individual pots or a single jug?

For ice cream, a jug. You are going to blend the yoghurt with the rest of the mix anyway, so the little pots only add washing-up.

Does homemade yoghurt change the formula?

Yes, and for the better: you know its solids and its fat. With a shop-bought one you go by the label, which usually has sugar and thickeners in it.
