Qué distingue a una gran heladería
Más allá de la carta de sabores, una buena heladería se reconoce en los detalles: vitrinas a la temperatura correcta, helado sin colorantes chillones, texturas cremosas sin exceso de aire y una rotación alta que garantiza frescura. La elaboración propia y la estacionalidad de las frutas suelen ser la mejor señal de calidad.
Italia, cuna del gelato
Italia puso el helado artesano en el mapa y su tradición es innegable: menos grasa y menos aire que el industrial, y siglos de oficio. En nuestro mapa encontrarás casas italianas de Módena, Roma, Bolonia o Agrigento. Pero ser la cuna del gelato ya no significa tomar el mejor helado: hoy se elabora a ese nivel —o por encima— mucho más cerca de casa.
