Chef's notes

  • ·Use good Bourbon vanilla pods: the result depends directly on the aroma you start with.
  • ·Do not skip the cold ageing: it hydrates proteins and stabiliser and clearly improves the texture.
  • ·The serving temperature depends on your recipe: if you formulate to a softer PAC than your freezer (say -11 °C with the chest at -18 °C), temper it for 5–10 min before serving; if the PAC matches your freezer, it can be eaten straight out.
  • ·Why formulate at -11 and not at -18 °C: even though your freezer sits at -18 °C, formulating at -11 makes the ice cream sepa mejor — at -18 it is so cold that the taste buds barely pick up the flavour and the fat is slow to melt in the mouth. And envejece mejor: ice cream formulated at -11 and kept at -18 has less free water, suffers less from Ostwald ripening (ice crystals joining and growing) and keeps its creaminess longer.
  • ·Keep your own notes: write down the POD and PAC that work best with your machine.

Vanilla ice cream is the backbone of any artisan gelato shop. Its apparent simplicity hides the challenge of striking a perfect balance between purity, creaminess and body. This recipe uses good Bourbon pods for a natural vanilla and that characteristic speckling of black dots, the sign of a proper extraction.

The ingredients and what each does

Every ingredient has a technical job: cream brings fat and creaminess, milk powder raises the non-fat solids, the sugars set the sweetness and the freezing point, and the stabiliser controls crystal growth during storage.

Technique and controlling the numbers

Adjusting the POD (sweetening power) and the PAC (antifreezing power, given as a target temperature) lets you match sweetness and hardness to your taste and your machine. With the selectors in the side bar the formula recalculates itself and you will see how the amount of each ingredient changes.

Storage and common mistakes

Store at -18 °C in an airtight container and avoid freeze-thaw cycles. The commonest faults are not ageing it enough, too much sugar so it never freezes properly, and over-churning, which whips in too much air and wrecks the texture.

Núcleo

  1. Melt and emulsifyMelt the chocolate in a bain-marie and add the room-temperature cream in 3 goes.
  2. Two hours in the freezerKeep it 2 hours in the freezer.

Bizcocho

  1. Melt it with the butterMelt the butter in a bain-marie, add the chocolate and mix until smooth.
  2. Beat the eggs and panelaSeparately, beat the eggs hard with the panela. Add the sifted flour and the optional ingredient.
  3. Fold together gentlyFold in the chocolate gently.
  4. Build the mouldSpoon some into the greased moulds, add a spoonful of the centre and cover with more batter.
  5. Bake 8-9 minutesBake at 180 ºC for about 8-9 minutes. Any you don't eat can be kept in the freezer.

Coulant, versión suflé

  1. MeltMelt the chocolate in a bain-marie, add the butter and let it melt and work in properly.
  2. Separate the eggsSeparate the yolks from the whites.
  3. Yolks with panelaWhip the yolks with the panela and add them to the chocolate.
  4. Whites to stiff peaksWhip the whites to firm peaks. Fold them gently into the mixture and mix until smooth.
  5. Bake at 200 °CPreheat the oven to 200 ºC, grease the moulds, spoon in some batter and bake for about 8 minutes.

Crumble de sablé francés

  1. Preheat to 170 °CPreheat the oven to 170 ºC.
  2. Cream the butter, salt and panelaCream the softened butter with the pinch of salt and the panela.
  3. The yolkAdd the egg yolk and carry on whipping.
  4. The dry ingredientsMix the baking powder, flour and cinnamon and fold into the previous mixture. Mix well, ideally with a machine.
  5. Roll it out and bakeRoll the dough between 2 sheets of baking paper and bake for 13 to 20 minutes, depending on the oven.
  6. Break it into crumbleLet it cool and break it up like a crumble.
