The brand is Musso; in the United States it is sold under the Lello name. The bowl holds a litre and a half, but the figure that matters is another one: the machine turns out three quarts an hour, nearly three litres, batch after batch and without resting. No other home machine does that.

Why the best one doesn't come apart

On almost every home machine the bowl lifts out, and between the bowl and the cooling circuit there is an air gap that costs efficiency. Here the bowl is part of the machine: the cold goes straight into the steel and the paddle scrapes the wall without leaving a frozen layer. You clean it with the machine in front of you, which is awkward, and in exchange you get a texture no removable bowl delivers.

Would we buy it? If ice cream is a serious matter, yes

It is the only one in the whole comparison that works like a small workshop machine: nearly three litres an hour, batch after batch, with a texture no other home machine reaches. It weighs seventeen kilos, the bowl doesn't come out, and it costs what several of the others cost together. The one Amazon sells runs on 110 volts; in Europe the closest in ambition is the Magimix Gelato Expert.

Why doesn't the bowl come out?

Because it is welded to the cooling circuit. With no air gap in between, the cold arrives sooner and the ice cream comes out finer.
