Review · Professional compressor ice cream maker

Cube 1500

A 35-centimetre steel cube that makes three kilos of ice cream an hour. It is the machine we film the videos with, so we speak about this one first-hand.

The short answer

Professional power in the space of a domestic machine

It does exactly what the Musso does, three kilos an hour, taking up sixteen centimetres less in width and weighing six kilos less. If your kitchen's problem is space, this is the answer. If the problem is the budget, it is not.

4,8
out of 5

Our score, given for what it gives us day to day.

How the ice cream turns out
It comes out churned and smooth, very close to what a gelato shop batch freezer gives. That is what you notice most coming from a domestic machine.
Manejo
Two switches and a dial timer. There are no menus and no programmes: switch it on, set the time and that is it.
Capacity
A kilo and a half per batch, and three kilos an hour because it strings batches together without resting in between.
Acabado
Stainless steel outside and in, hand-assembled in Italy. You feel it in the weight: twenty-five kilos.
What makes it different

Four things you will not see on the spec sheet

The name is the grams

Cube 750 and Cube 1500 are neither litres nor watts: they are the grams it makes at a time. The 1500 turns out a kilo and a half per batch and, since it strings two batches together in an hour, ends up giving three kilos. Once that is clear, the range makes sense at once.

440 watts in 35 centimetres

That is almost twice the power of the Musso in a considerably smaller body. It is no magic: it is a compressor sized to work continuously, which is what separates a single-batch machine from one that lasts the afternoon.

The lid cuts off the paddle

It comes with a safety device as standard: lift the lid and it stops. That is exactly what the Musso 5030 Home does not have, and with children at home the difference is not a small one.

The paddle scrapes the bowl wall

It scrapes the ice cream off the wall as it freezes. In a domestic machine that layer stays stuck and never gets mixed back in: ice cream you lose and a texture that never arrives.

What you notice at the end of the batch

It does not lose power as the ice cream thickens

This is where the real difference with a domestic machine lies. The EMMA, which we have also owned, starts well and slows down as the ice cream firms up; this one holds its speed to the end, with the ice cream already hard. The paddle churns the same at minute thirty as at minute one, and you can see it in the texture that comes out of the bowl.

The balance

What it gains
and what you have to accept

The best of it
  • Three kilos of ice cream an hour, stringing batches together with no cooling stop
  • Fixed steel bowl: there is never a container to put in the freezer
  • Low-speed paddle: less air inside and more flavour per spoonful
  • The lid stops the paddle, with a safety device as standard
  • Thirty-five centimetres a side: it fits where a machine with this output usually does not
  • Stainless steel, hand-assembled in Italy
  • Drain hose to empty the washing water without tipping the machine
What you have to accept
  • Outside the Amazon circuit: no thirty-day returns and no price comparison
  • Twenty-five kilos, so you find it a place on the worktop and there it stays
  • It is expensive: for what it costs you could buy six decent domestic machines
  • Little Spanish-language community, with few reviews and few tutorials to hand

The Cube 1500
against its rivals

None of the four does what this one does, but they are the ones anyone who gets this far considers: its little sister and the three domestic machines that come closest.

It makes half as much, takes up five centimetres less and costs considerably less. It also lacks the big one's drain hose, so it is cleaned by hand.

The verdict

Would we buy it?
Yes, and we actually own it

The Cube 1500 is the machine for someone who has already left the trying-it-out phase behind. It is not a starter purchase and does not pretend to be: it is the tool of someone who makes ice cream often, in quantity and to the same standard every time. And as always: the machine supplies the cold, you supply the balance.

Answers to your questions

Frequently asked questions

Where do you buy it?

Amazon does not sell it. That is why there is no purchase or affiliate link on this page: this is an analysis, not a shop window.

What is the difference with the Musso?

It does the same, three kilos an hour, taking up sixteen centimetres less in width and weighing six kilos less. If your kitchen's problem is space, this is the answer.

It plugs into a normal domestic socket: 220 V and 2.5 A, with no special installation.

How long does a batch take?

Between 20 and 35 minutes for a kilo and a half, depending on the recipe and the starting temperature.

Does it fit in a normal kitchen?

It is a cube 35 cm on each side and 25 kg. It fits, but it is not one to put away and get out again: it needs a permanent spot.

Is it safe with children around?

Opening the lid stops the paddle, which is the protection that really matters on a machine with this much power.

Have you actually used it?

Yes. It is the machine we film the videos with and the one we churn our recipes in, so we speak about this one from experience.
