Tubs and containers

Ice cream keeps better covered in contact and in a wide, shallow container: it freezes sooner and recrystallises less.

Answers to your questions

Frequently asked questions

Why does ice cream get covered in frost in the tub?

Because of the air. The less gap left between the ice cream and the lid, the fewer crystals form on top.

What tub size works best?

Better several small ones than one big one. Every time you open one and take it out of the cold, the whole tub suffers.

¿Metal o plástico?

Metal cools sooner and helps the blast-chill, but it frosts more on the outside. Rigid plastic is more practical for storing.

¿Hace falta tapa hermética?

Yes. The freezer dries things out, and an uncovered ice cream takes on the flavour of everything around it within two days.
