Why does my ice cream stick to the mould?
Haste. Unmoulding is done with a short burst of warm water on the outside, five seconds. Cold, you tear off the outer layer.
¿Silicona o metal?
Metal cools faster and gives a better texture. Silicone unmoulds more easily but takes longer to freeze.
What formula does a moulded ice cream need?
A slightly softer one: without churning it holds less air and comes out harder. It is worth raising the anti-freezing power a little.
How long does it take to set?
With a metal mould and the freezer at −18 °C, four to six hours. Silicone ones can take all night.
