Why steel and not plastic?

Steel cools fast and does not pick up smells. A plastic bowl keeps yesterday's garlic and passes it on to the mix.

What do I use it for in ice cream making?

For the ice bath. Once pasteurising is done the mix has to come down fast, and steel is what conducts that cold best.

One that fits inside a bigger one with ice and water. At 24 and 28 cm across, the pair is sorted.
