Answers to your questions

Frequently asked questions

Why does the mix need blending?

To emulsify. If fat and water do not come together properly, the ice cream leaves the mouth greasy and separates as it melts.

Stick blender or jug blender?

Stick blender. You work inside the same pan, with no transferring, and you beat in less air ahead of time than you otherwise would.

How much power do I need?

600–800 W works well for home use. More than the wattage, what matters is keeping the blade submerged and avoiding drawing in air or creating foam.

At what point do you blend?

Right at the end of pasteurising, with the mix still hot: that is when the fat is fluid and really emulsifies.
